If im not mistaken equity tokens are just like bonds on the stock market right? If you have equity tokens, you are considered as a shareholder of that company?

you are right, Equity/capital(equity) is the owner's rights to the company's assets which are net assets (total assets minus liabilities).

Basically the key difference is that equity tokens entitle the holder to ownership rights, while utility tokens functions as coupans and do not provide holders with an ownership stake in a company's platform or another assets.

As some people said above you equity token represent your ownership to that company but the utility is an ability to use your coin on the platform.
Just like when you are investing in ICO and you will get token and that token can be considered as your ownership to the ICO's company but when you are buying veil and use on its platform and this can be considered as utility because you wanna use the ability or features that available on the platform.
